A couple of weeks ago I posted that we were having chicken curry for dinner, my dear friend Nathalie asked if I would post the recipe. So here it is.
Chop garlic, onions and red chillies and fry in a pan.
Add the chicken thighs to the frying pan.
Make a mix using one teaspoon each of hot chilli, garam masala, oregano, Ground turmeric, paprika, cumin, ground coriander, star anise, cardamom and coriander seeds. These are then added to the frying pan for a couple of minutes coating the chicken and onions.
We then add two tins of chopped tomatoes and some chicken stock and cook on a low to medium heat on the stove for an hour.
We have it with Rice and fresh Coriander.
Its a tasty meal and it freezes well.

Oh yum! Thanks so much for remembering to post the recipe, Tara! I'm going to print it and probably put it on the menu soon. I think I have all the spices already but not the "hot chili". I have chili powder, which might be similar. I can't wait to try it. Your pictures make it look very delicious :)
ReplyDeleteOne difference between the US and the UK: we call the fresh plant "cilantro" and the dried seeds "coriander" (they're usually ground). I noticed that in one of the Great British Bake-Off episodes recently!
Normal chilli powder will be fine Nathalie. Let me know what you think when you try it. I always see cilantro in American recipes and always thought it was something lemony ha ha now I know. Love Great British Bake-Off by the way xx
